A different way to look at leftovers...

Being on bedrest has certainly pushed us to be more creative with meal time. We've had many many many meals provided by our church, which have all proven to be blessings. With all we've received, there should be plenty to freeze for those days when getting a meal together is just not happening.
However, a person can only look at the same meal a few times before you near the brink of "It will be many months before I eat THAT again!" We have neared that state a few times in the last three weeks and are getting even more cleaver at ways to "remake" the meal remnants that linger in the frig.
Here is one that I quickly put together today during one of my "breaks" from resting. It's one that I remember my mom "whipping up" for us as kids.
As I laid on my bed and listened to my family's chatter over lunch, I heard songs of praise from my girls. "This is soooo yummy!" they sang. It's good to provide something good for my family.

A note before I give you the recipe: you must be incredibly flexible with the measurements. I give nothing in exact measure since you will find that it can never, I mean NEVER be made the same way twice.

Mom's Sandwich Spread
Approx. 3-4 cups meat, cut into chunks (ham, pork loin, chops, beef roast, or whatever leftover meat you have on hand)
1/3 to 1/2 medium onion, coarsely chopped
About 1/3 roasted red pepper, coarsely chopped

Dump all this into a food processor. Process on low for about 8 seconds (DO NOT overdo it. You don't want it to become pudding.)

Place into a larger bowl. Add the following:
1/2 to 3/4 c mayo
1 or 2 spoonfuls of pickle relish (sweet or dill-whatever you have on hand)
Salt and pepper to taste
Mix well. Spread on bread for an easy sandwich or use with crackers.

Makes about 6 full sandwiches (depending on how much you spread on).
